Am still alive and still plodding on... have been reducing my carb intake and now have salad with either salmon or shredded chicken 4 times a week for lunch and have really noticed my energy levels in the afternoons! Last Friday, I met an old work mate for lunch and ended up having a potato dish for lunch and OMG talk about being sluggish and tired all afternoon! So no more carbs (esp high carb dish like potatoes) at lunch time especially! Am generally having scrambled eggs for breakfast (and now Rachel is eating them to after many attempts of trying her on them) and then dinner usually still involves a new boiled potato (or two if they are small) but that is a reduction on what I used to do so am slowly cutting them back too. Slowly but surely for me and I will get there. The only thing I need to work on is my snacks as I don't eat nuts or seeds... so have been having rice crackers or another form of crackers, I know they are a form of carb, but still better than other crap that I could be (and used to be) having! Also eating approx 4 pieces of fruit a day, but that's only cause there are so many varieties of yummy scrummy stone fruit around!
Am down 1.1 kilos in the last 6 weeks, so not a lot but still down rather than up... now I just have to work on the exercise side of things to ensure I can do the healthy eating AND the exercise hand in hand rather than doing one or the other at one time... I NEED TO DO BOTH AT THE SAME TIME TO MAKE THIS WORK!!! Bought some awesome Addidas sneakers on Friday in a clearance sale ($120 down to $80) and then scored some lovely socks yesterday, so no excuses for me anymore! I do need to get back into the gym!! I haven't been since prior to Christmas as I wanted to concentrate on my walking but even that has been a bit slack of late! Now that I have fitting and comfortable sneakers, everything SHOULD be ok and easier for me to exercise rather than wearing sneakers that were to tight and caused me to have blisters every time I wore them!
Have had a strange week, as on Tuesday morning (16th), I was eating a sausage roll *blush* - had a rough night and was comfort eating, and anyway about 3 mins after eating it, I started to get this awful feeling that my tongue was starting to swell up so let my team members know (just in case something happened) but nothing eventuated (thank god) but since then I have had a funny numb feeling in my mouth as in like I have a burnt mouth. Saw a pharmacist on Friday morning, who suspects it could be an infection (am sure it's not thrush) and if it is still around on Monday (tomorrow) to go the Dr. So once back at work, I made an apt for the Dr on Wed night (my Drs late night) and managed to get her last available apt so grabbed that and can always cancel it if I come right or cancel it if I end up going earlier if necessary! Today it has been quite good, but the funny feeling is still there but thank god the sore throat I had last night as well has gone as that was a killer!
Rachel is doing well though has not been well today, woke with a temp and we gave her some pamol, and an hour later she was good, and then would just crash again for a couple of hours before pamol and the cycle would repeat itself... so am hoping she will be ok tomorrow otherwise I won't complain of a day at home with her as I could do with a day off!
Work is chaotic with a few issues occurring too! Am taking on the Team Leader role next week (1 March) and am not sure if I am looking forward to that or not... I know I need to do it for the experience esp for the role that I want to go into if I stay with DOC as most of the people in that role (around the country side) have staff reporting to them so I need to have that experience of staff supervision etc... so need to tackle it and do the best I can.
Anyway, time for me to head to bed - will probably still be another half hr before I get there as most of you know as it's not as simple as going to bed as you find things on the way to the bedroom that need doing! LOL

Well done Karen - remember the main reason to low carb is to curb you hunger - don't forget to add more protein as this is the main thing that reduces hunger. For your snacks include things like some chicken, ham, boiled eggs, a small piece of cheese, diet jelly, apple etc.
Try to avoid fruits high in sugar like apricots, grapes and dried fruits. But as you say, these are still better than bread and lots of starch.
New boiled potatoes are actually lower GI than old potatoes so probably not a bad choice if you must have them. I find that by just having lots of other veges on my plate I don't miss my potatoes.
Just remember it is not a race but a life change. Don't do anything that you can't continue with - do what feels right for you and what works for you. Good luck.
Oh and one other thing - if you go to the supermarket (Foodtown/Countdown has a good range) buy a couple of the Aitkens Endulge CARAMEL NUT CHEWS. These taste just like a nutty Moro bar - if you don't like nuts then there is a coconut chocolate one. I admit they are not cheap at around $2.50 but hey, they are guilt free (approx 3 points) and virtually carb free. They can really help on a day when you need that chocolate fix!!!

I am also doing low carbs and feel much better for it.
I hope your doctor's appointment goes well and it is nothing to be worried about.

It takes time to try different things and find the right mix for you, I think you're doing a great job for a working mum - life can be so hectic and we often forget to give ourselves a priority!
Hope that all is ok with your tongue, sounds a bit odd!
